Camp Recipe: Cilantro Lime Chicken Tacos

Prepare the marinade by mixing olive oil, lime juice zest, cilantro and spices together in a little bowl. Set the chicken into a refrigerator or cooler to marinate for an hour, or up to overnight.
Makes 2-4 servings (25 minutes of prep +2 hours marinating time)

  • 4 boneless, skinless chicken thighs (about 1 pound )
  • 2 tbsp chopped cilantro
  • 2 limes juice zest
  • 1 tsp salt
  • 1 teaspoon chili powder
  • 1 tsp cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground coriander
  • 1 tbsp oil

To assemble the tacos, layer chicken, pico de gallo, cheese, and fresh cilantro into tortillas (heated over the grill should you would like ) and enjoy!
